RECIPE: Edikaikong

Edikaikong


ingredients
1kg beef
1 cup of very rich stock
10cups of spinach leaves, finely chopped
5cups of waterleaf, finely chopped
500g dried fish
500g stockfish, cleaned and softened
300g kpomo(cow skin ){optional}
1 1/2 cups crayfish, ground
Chili pepper to taste(atagungun)
3 seasoning cubes
3 cups of palm oil
1 onion bulb
Salt to taste
Tip: Water-leaf has water so ensure the stock is little but rich to avoid having too much water in the soup-
NOTE: you can add periwinkle,snails shrimps,  etc....
Directions

Wash all the ingredients thoroughly
Season and boil your meat to make your stock
When the meat is soft, add the stockfish, kpomo and cook further
When you have about one cup of water in the pot, add the spinach leaves and cook for about 3minutes
Add the waterleaf, crayfish and the palm oil
Cook for about 5minutes
Add the seasoning cubes and pepper
Add salt to taste
Remove from heat
Your edikaikong is ready
Serve with pounded-yam, eba and any dish of your choice

HOW TO CARE FOR YOUR POTS AND PANS

Washing Pots and pans are the hardest work in the kitchen. They are used in cooking the food. When they are not on the stove, they hold the food and later go through a lot of scouring and cleaning. The following are ways you can make these useful utensils serve you better and longer.
1. Before using a pot or pan for the first time after buying it, wash the utensil with hot water, leave to dry and rub the inside with a small amount of cooking oil. This oil maybe vegetable oil, groundnut oil or olive oil. This rubbing of the pot or pan with oil prevents food stains as much as possible.

2. Do not heat a pot or pan when it is empty. Always ensure you have oil or water in the pan before setting it on the stove.

3. Always use the correct burner size for the pot. If the burner is bigger than the pot, this means too much heat for the pot or pan and causes the utensil to have more exterior stains
.
4.If the flames are going up the sides of the pot or pan (in the case of gas burners) or if you can see the red coils from the base of the pot (in the case of vitro ceramic burners), then there is a pot size and burner size mismatch.
If you continue cooking this way, the handles of your pots and pans will fall off quicker than when you are matching the pot and burner size.

5. One of the best ways to remove burnt food from a pot or pan is to pour enough water to cover the burn, add some dish washing liquid and bring to the boil. Allow to soak till the water has cooled down. The burnt food can then be easily washed off from the utensil.
It is never advisable to remove burnt food from the inside of a pot or pan by scraping with iron sponge. This creates lines inside the utensil and makes it easier for it to burn food in the future.
Always wash the inside of your pots and pans with a soft sponge. You may use the iron sponge for the exterior of the utensil only.

6. Do not use pots and pans in the oven if their handles are made of wood or plastic. The obvious reason is that this will cause wooden handles to char and plastic handles to melt.

Heart-Healthy Cooking Tips
To lower your risk of heart disease or to manage your existing disease, try these tips in preparing meals: 
Limit Fat, Especially Saturated and Trans Fat 
Select lean cuts of beef and pork, especially cuts with "loin" or "round" in their name.
Remove all visible fat from meat before cooking. Take the skin off chicken or turkey before eating it.
Cut back on processed meats high in saturated fat, such as hot dogs, salami and bacon.
Bake, broil, roast, stew or stir-fry lean meats, fish or poultry.
Drain the fat off of cooked, ground meat.
When you make a stew, soup or gravy, refrigerate leftovers and skim off the fat with a spoon before reheating and serving.
Eat fish regularly. Try different ways of cooking like baking, broiling, grilling and poaching to add variety.
Include plant foods as sources of protein, including soybeans, pinto beans, lentils and nuts.
Replace higher-fat cheeses with lower-fat options like reduced-fat feta and part-skim mozzarella.
Thicken sauces with evaporated fat-free milk instead of whole milk.
Move toward using lower-fat milk and yogurt. Start with 2 percent products, then move to 1 percent and finally to fat-free to adjust to the new taste.
Use liquid vegetables oils and soft margarine instead of stick margarine or shortening.
Limit consumption of cakes, cookies, crackers, pastries, pies, muffins, doughnuts and French fries. These foods tend to be high in trans fats. Many food manufacturers have removed trans fats from their foods. Check ingredient lists on food packages and avoid products containing partially hydrogenated oils.
Use a small amount of oils such as canola, olive and soybean in recipes and for sautéing.
Make salad dressings with olive, walnut or pecan oil.
Eat Foods Containing Omega-3 Fatty Acids 
Select oils that provide omega-3 fatty acids, such as canola, flaxseed or soybean oil.
Add walnuts to cereal, salads or muffins. Try walnut oil in salad dressings, too.
Eat two 4-ounce portions of fatty fish each week, like salmon, lake trout, albacore tuna (in water, if canned), mackerel and sardines.
Some chickens are given feed that is high in omega-3s so their eggs will contain more as well. When buying eggs, check the package label. Remember all egg yolks contain cholesterol.
Reduce Salt (Sodium) 
Prepare foods at home so you can control the amount of salt in your meals.
Use as little salt in cooking as possible. You can cut at least half the salt from most recipes.
Add no additional salt to food at the table.
Select reduced-sodium or no-salt-added canned soups and vegetables.
Check the Nutrition Facts panel for sodium and choose products with lower sodium content.
Season foods with herbs, spices, garlic, onions, peppers and lemon or lime juice to add flavor.

The bottles all come with a leather case. The water also contains 5 milligrams of gold dust.

The Kona Nigari water is bottled water that is sold in Japan. It is advertised as water that can help you lose weight, reduce stress and improve skin tone and quality. It is actually made of desalinated sea water collected from a couple of thousand feet below the surface of the ocean in an area off the island of Hawaii. In other words, you pay more than 400 bucks to satisfy your thirst while doing the job of a dermatologist, fitness trainer and psychiatrist combined. Maybe, it is not such a bad deal.

RECIPE: CHAPMAN DRINK

Chapman drink

Ingredients
 for 2 classic dimpled mugs of chapman:
½ cup Grenadine Syrup
A few dashes of Angostura Aromatic Bitters
35 cl Fanta Orange
35 cl Sprite
½ an Orange
½ a lemon
Ice cubes
Ribena Blackcurrant (optional)

To garnish:
Feel free to add any citrus and other fruits of your choice: cucumber, strawberry, orange, lemon, lime, even bananas. I used the following:
½ an orange
½ a lemon
½ a cucumber
Notes on the Ingredients and alternatives
Grenadine Syrup gives the drink its classic red colour. If you can't find Grenadine Syrup, you can use red currant (extract the juice) or pomegranate but these don't give the drink the same taste.
Ribena concentrated blackcurrant adds to the red colour and gives the drink a sweetened taste but it is optional. Concentrated Ribena blackcurrant is easily available in Nigeria and your local supermarkets anywhere in the world.
You can make your ice cubes with a mixture of the Fanta and the Sprite. This is so that your drink does not go flat as is the case when the ice cubes are made with water.
Even though the   chapman contains a very small quantity of alcohol, there are those who will like to make a version that does not contain any trace of alcohol. If you want to make that, you can skip the Angostura Bitters but I warn you, the   Chapman will not be the same without Angostura Bitters. :)
Wondering other recipes you can use the remaining Angostura Bitters for? You can use it in cookies, cakes, ice cream, salads and other cocktail drinks. Or you can just keep it and use for Chapman, it does not expire in a hurry.

Before you make the Chapman
Make the ice cubes either with water or a mixture of the fanta and the sprite.
Make sure the Grenadine Syrup, Fanta and Sprite are chilling in the fridge.
Cut the orange and the lemon into two equal parts each then cut one half of each into thin quarters. Reserve the other halves for squeezing into the drink.


Directions for making the Chapman
Put a few ice cubes in the mugs.
Add half a cup of the Grenadine Syrup, this should be about one third of the dimpled mug.
Add a few dashes of Angostura Bitters (to your taste).
Add a squeeze of orange and lemon each.
Share the Fanta equally between the two mugs, do the same for the Sprite. Remember to leave some space because the garnishing’s will take up their own volume.
Add your sliced garnishing’s: cucumber, orange and lemons. This list goes on and on, some people even add bananas to theirs :)
Top off with Ribena blackcurrant if you have it.
Stir with the straws and it is ready for drinking!
Enjoy it on a warm sunny day or on any special occassions with any snacks

Add a teaspoon of bicarbonate of soda(baking soda) to the hot water to help remove stubborn stains. After ten minutes rinse and buff with a tea towel for a spectacular shine.



Want your wine glasses to shimmer on the dining table? Hold one above your kettle as its boiling and let the steam fill the glass. Use a clean tea towel to polish.

RECIPE: PUFF-PUFF

PUFF PUFF

 
 INGREDIENTS

•250g of Plain Flour
•20g Granulated Sugar                                                         
•2 level teaspoons of powdered baking yeast/5g fresh yeast
•half teaspoon of salt
•A pinch of ground nutmeg(optional)
•Lukewarm water
•Vegetable Oil (for frying)

Directions

*First dissolve the yeast with warm water and set side

*Pour the flour into a big bowl, add the ground nutmeg, sugar, salt and the powdered yeast:and mix together.If you are making use of  fresh yeast, dissolve the yeast with warm water and add it.

*Now add the water, bit by bit and mix thoroughly.Puff puff is usually mixed by hand, but
you can also  mix with a flat wooden spoon. Mix for about 10minutes or until there are no lumps in it, and the batter is smooth , but it should not be watery.

*Cover the bowl (airtight) with a clean dry cloth or aluminum foil  and leave the batter to rise for about 45 to 50 minutes.To know if the batter is ready for frying, you will notice some air bubbles on it and also that it has doubled in  size and a little thicker.

*Now, heat up some oil in a deep pot, the oil should be deep enough to cover an egg, so that when you drop the batter into the pot, you won't get a flat puff puff.

*Now do an oil test. This is done by dropping a little of the batter in to the oil.The oil is ready when the puff puff rises to the top.

*Scoop the batter into your palm and drop into the oil by pressing the batter between your thumb and your fore finger(the finger closest to the thumb).

*Fry until brown.Then transfer onto a sieve lined with papertowels. 

  
serve with chilled drinks or hot tea (your choice)
